Ingredients
- 2 lb (900 g) chicken pieces or wings
- Buttermilk or brine (optional)
- Flour or coating mix, salt, spices
- Oil for frying (or oven/air-fryer setup)
- Sauce or dip if you use one
- Usual sides (e.g. slaw, bread, fries)
Instructions
- Season or brine chicken. Dredge in coating.
- Fry, bake, or air-fry until cooked through and crisp (internal temp 165°F / 74°C).
- Rest briefly; sauce if desired.
- Serve with your usual sides.
- Same coating style and cook method as Regular.
- Keep the chicken; choose a lighter side or a smaller portion of fries/sugary drink.
- Still fried or crisp chicken — not a grilled-only mandate unless you prefer that.
Better steps keep the same dish — one useful change, not a different recipe.
