Regular

Full biryani — aromatic rice, chicken, spices as usual.

Better

Same biryani with more chicken relative to rice. Still biryani — not cauliflower rice.

Ingredients

  • 2 cups basmati rice
  • 1.5 lb (700 g) chicken or other protein, cut into pieces
  • Yogurt, onions, garlic, ginger
  • Biryani spices (garam masala, turmeric, chili, whole spices)
  • Oil or ghee, salt
  • Optional: herbs, fried onions, raita on the side

Instructions

  1. Marinate protein in yogurt and spices. Par-cook rice.
  2. Cook onions and spices; add protein and cook through.
  3. Layer rice and protein; steam until rice is done and fragrant.
  4. Rest, then serve with raita or your usual sides.

Better steps keep the same dish — one useful change, not a different recipe.
