Ingredients

  • 200 g Rice noodles cooked
  • 200 g Shrimp raw
  • 2 Large egg
  • 3 tbsp Fish sauce
  • 3 tbsp Granulated sugar
  • 2 tbsp Tamarind concentrate
  • 2 tbsp Peanut oil
  • 60 g Bean sprouts
  • 2 tbsp Peanuts, roasted, unsalted

Instructions

  1. Soak or cook rice noodles per package, then drain.
  2. Stir-fry shrimp in oil until just cooked; push to the side.
  3. Scramble the eggs in the same pan.
  4. Add noodles, fish sauce, sugar, and tamarind; toss to coat and heat through.
  5. Fold in bean sprouts, top with peanuts, and serve.
