Ingredients
- 2 cups basmati rice
- 1.5 lb (700 g) chicken or other protein, cut into pieces
- Yogurt, onions, garlic, ginger
- Biryani spices (garam masala, turmeric, chili, whole spices)
- Oil or ghee, salt
- Optional: herbs, fried onions, raita on the side
Instructions
- Marinate protein in yogurt and spices. Par-cook rice.
- Cook onions and spices; add protein and cook through.
- Layer rice and protein; steam until rice is done and fragrant.
- Rest, then serve with raita or your usual sides.
- Same spices, rice, and method as Regular — still real biryani.
- When plating, take a higher share of chicken relative to rice, or a slightly smaller overall plate.
- Do not replace the rice with cauliflower rice.
- Serve so it still smells and looks like biryani.
Better steps keep the same dish — one useful change, not a different recipe.
