Ingredients
- 300 g Clams
- 150 g Bacon raw
- 2 cup Potato baked with skin
- 1 cup Celery
- 1 cup Heavy cream
- 2 cup Whole milk
- 3 tbsp All-purpose flour

- 2.5 cup Whole milk
- 3 tbsp All-purpose flour
Instructions
- Cook bacon in a pot until crisp; remove and set aside, leaving the fat.
- Sauté celery and diced potato in the bacon fat until softened.
- Sprinkle flour over, stir, then add milk and cream gradually.
- Simmer until thickened, then add clams and cooked bacon.
- Simmer a few more minutes and serve hot.
- Same chowder, with the cream cut roughly in half and replaced with extra milk.
- Cook bacon, then sauté celery and potato in the fat.
- Sprinkle flour over, then add the milk and reduced cream gradually.
- Simmer until thickened, add clams and bacon back in.
- Simmer briefly and serve — same chowder, lighter dairy.
